Two-Potato Salad

3 lbs red potatoes, cut into 1 inch pieces
3 lbs sweet potatoes, peeled and cut into 1 inch pieces
6 TBSP vinegar
1 ½ cups sour cream
½ cup fresh chives, chopped
1 ½ tsp salt
½ tsp pepper


Boil potatoes until tender. Drain and place in large bowl. Drizzle with vinegar and toss to coat. Let cool to room temperature. Combine remaining ingredients and mix with cooled potatoes until coated.

Grandma's Turkey Meatloaf

1 ½ lbs ground turkey
1 lb turkey sausage
½ cup chopped onion
½ cup milk
½ - ¾ cup oatmeal
1 egg
salt and pepper to taste


Combine all ingredients, place in loaf pan, and bake at 350˚ for 1 hour.

Simple Pickled Garlic


Fill a pint jar with raw, peeled garlic. Combine 1 cup white vinegar and 1 TBSP salt and pour over garlic until covered. (More liquid may be needed; just use the same vinegar : salt ratio.) Refrigerate for at least one week.

Chicken Curry

2 TBSP olive oil
3-9 garlic cloves, minced
3 small onions, minced
1-2 tsp ground ginger
5 TBSP curry powder
5 TBSP water
1 cup plain yogurt
1 can coconut milk
1 cup milk
4 lbs chicken, cut into bite-sized pieces
salt to taste
3-4 TBSP green curry paste


Mix together curry powder and water to form a paste, then set aside. Saute garlic, onions, and ginger in oil over medium-high heat until browned. Add curry paste and sauté until smell is strong and fragrant, then stir in yogurt, coconut milk, and milk. Add chicken and bring to a boil, then reduce heat and simmer until chicken is cooked through (about 20-25 minutes). Season with salt to taste, and stir in green curry paste. Simmer for a few more minutes, then serve over rice.

Enchilada Casserole


2 lbs hamburger, seasoned for tacos
1 onion, chopped
25 oz jar garlic/tomato pasta sauce (or tomato sauce)
1 cup water
1 can olives, sliced
4 cups grated cheddar cheese
12-14 corn tortillas


Cook together hamburger, seasoning, and onion, then add pasta sauce, water, and olives and simmer. Spread some of the meat mixture in the bottom of a large casserole dish, then layer torn tortillas, meat mixture, and cheese. Repeat until ingredients are used up, ending with a layer of cheese. Cover and bake at 325˚ for 30-40 minutes, then remove lid and broil for 5 minutes or so until cheese is crispy and browning.

Snickerdoodle Cookies

Mix 1 1/2 cups softened butter, 1 cup sugar, and 2 eggs together thoroughly. Sift together 2 3/4 cups flour, 2 tsp cream of tartar, 1 tsp soda, and 1/2 tsp salt and stir into sugar mixture. Chill dough. Roll into walnut sized balls, then roll in mixture of 2 TBSP sugar and 2 tsp cinnamon. Place 2" apart on cookie sheet. Bake at 400˚ until lightly browned, about 8-12 minutes.

Hot Applesauce Cake

1 cup sugar
3/4 cup butter or coconut oil
2 1/2 cups flour
2 eggs
1 tsp salt
1 tsp cinnamon
1 tsp cloves
1 tsp allspice
2 tsp soda
1 tsp baking powder
2 cups hot unsweetened applesauce

Cream together sugar and butter, then add eggs and blend well. Add dry ingredients, alternating with applesauce. Mix well and pour into greased 9x13 pan. Sprinkle with 1/2 tsp cinnamon and 1/4 cup sugar. Bake at 350˚ for 45 minutes or until done.
