Banana Bread

3 large or 4 small very ripe bananas
2 TBSP olive oil
1/4 cup honey or maple syrup
1 egg
1/4 cup yogurt

1 1/2 cups whole wheat flour
1/4 cup ground flax seed
1 tsp baking soda
1/2 tsp salt

Mash the bananas with a fork.  Add the rest of the wet ingredients and mix well.  Add the dry ingredients and stir just enough to combine, until everything is moistened.  Pour batter into a greased loaf pan.  Bake at 350˚ for 45-55 minutes, until a toothpick inserted in the center comes out clean.

VERY similar to the recipe I use - except that I use more flax because I can't use egg for allergy reasons. I will have to try mine with honey instead of sugar and yogurt instead of applesauce.
