1/3 cup sugar
1 egg white
1 cup unsweetened shredded coconut
1/4 cup chopped almonds
1/2 tsp vanilla
pinch of salt
Whisk together sugar and egg white, then stir in the rest of the ingredients. Divide into eight drop-mounds on a parchment-lined baking sheet and bake at 350˚ for 15 minutes, until bottoms and edges are golden brown. Cool on wire racks.

Eggnog Smoothie
1 1/2 cups whole milk
1-2 handfuls raw spinach
2 raw egg yolks (from pastured chickens)
2 tsp vanilla
1/4 tsp nutmeg
1/2 tsp cinnamon
3 TBSP maple syrup or honey
handful of ice cubes

Red Pepper and Goat Cheese Frittata
1-2 red bell peppers, sliced
olive oil
pinch of sea salt
10 eggs
sea salt and pepper to taste
1 cup fresh parsley, chopped
4 oz crumbled goat cheese
Saute onion and peppers in olive oil until soft; add a pinch of sea salt at some point. In a separate bowl, whisk together 10 eggs, with sea salt and pepper to taste, then stir in parsley. Arrange onion and peppers in a baking dish, and pour the egg mixture over them. Sprinkle goat cheese over the top. Bake at 400˚ for 18-23 minutes, or until the center is set.

Quiche
Crust:
1 1/3 cups flour
1/4 tsp salt
1/4 tsp baking powder
1/3 cup oil
3 TBSP milk
Combine dry ingredients with oil, stirring with a fork until well blended. Add milk and form into a ball. Roll out between two sheets of wax paper. Remove from wax paper and place in pie plate.
Filling:
4 eggs
1/4 cup milk
salt and pepper (to taste)
1/2 can of corn
4 oz chopped mushrooms
1 cup cheddar cheese
2 cups steamed chopped broccoli
1/2 red bell pepper, chopped
Beat together eggs and milk. Stir in any combination of additional ingredients. :)
Pour into unbaked crust. Cover with foil and bake at 425˚ for 10 minutes, then uncover and reduce heat to 350˚. Bake for 30 minutes more or until set. Cool 10-15 minutes before cutting.
