Vegetable Rice Salad

2/3 cup cooked brown rice, cooled
1 green pepper, chopped
1 red pepper, chopped
1/2 red onion (or sweet onion), chopped
3 garlic cloves, minced
2-3 cups corn (rinsed and drained if using canned)
2 cups black beans (rinsed and drained if using canned)
2 tomatoes (or a handful or two of grape tomatoes), chopped
1/3 cup lemon juice
1/2 tsp cumin

Mix together.  Chill if desired, or serve immediately.
